I have been MIA for quite a while from this blog, so sorry to the few of my followers but I think there’s something you should know; I’m no longer raw or even vegan. I now eat very high quality chicken, fish and eggs along with cooked food, legumes and grains (and fruit, vegetables, nuts and seeds). Basically my diet is balanced with clean, whole foods. So why the change? After I was so convinced that raw was optimum, my new lifestyle. I got sick, I’m sure you’ve all heard the story of failed raw foodists; hair loss, cease of menstruation, breakouts, no energy, stomach bloating, muscle loss. I may have been detoxing or under-carbed but I realize it wasn’t worth sacrificing my health for a diet that was killing me. I developed orthorexia (yes, it does happen) and a huge array of nutritional deficiencies, bone problems and I’m now severely underweight. This has affected every aspect of my life and it’s a huge struggle to become healthy again. I’m aware I’ll probably lose all of you as followers but this is not a joke. This diet can be catastrophic, maybe not right now but eventually. Please pay attention and if anything at all is bugging you about the diet DO SOMETHING!! Don’t wait until it’s too late.

kale taco salad w/ smokey walnut chorizo.
this was sort of a ‘whatever’s left in the fridge’ salad that i came up with. had a bunch of kale, an ear of corn, some radishes, a lime, & cilantro, and this is what happened. it came out incredibly flavorful.
salad ingredients:
1 bunch kale
1 T chickpea miso
1 lime, juiced
a few T nutritional yeast (for a cheezy flavor)
cumin
garlic powder
1 ear fresh corn, cut from cob
1-2 radishes, julienned
small handful of fresh cilantro, rough chopped
*massage kale very well with miso & lime juice until wilted. toss with nutritional yeast, cumin, & garlic powder, to taste. toss in corn, radish, & cilantro.
smokey walnut chorizo ingredients:
1 c raw walnuts
a dash of tamari/nama shoyu
smoked paprika
garlic powder
onion powder
cayenne pepper
oregano, dried or fresh
a dash of liquid hickory smoke
a dash of water (i used the soaking water from some sun-dried tomatoes i was rehydrating)
*pulse all ingredients in food processor until moist & crumbly. adjust spices to your liking. crumble chorizo lightly with your fingers over salad & toss well. plate & top with sliced avocado, if you’ve got it. i didn’t :(.

If I was in your class I would SO be asking you for a bite of that ;)Rice paper wraps, ready to take to class. These are zucchini, grated carrot, romaine lettuce, enoki mushrooms, basil and peanut sauce. The peanut sauce is peanut butter, coconut milk yogurt, garlic, ginger, sambal oelek, and lime juice. I forgot to add soya sauce. For the zucchini i just peeled into it with a normal peeler and put the strips down first. I made an extra one of these to try and the zucchini actually helped it retain it’s shape so I think I’ll be able to eat these semi-gracefully in class today.
